First, the fully mature coconut is harvested, next, the coconut's husk is removed, they are split in half and the fresh flesh is immediately grated out of the ‘nut’. Individual batches of grated flesh (from 10 to 15 coconuts) are then dried on the stainless steel surface of an outdoor hand-made wood-fired flat top. The coconut is dried for about half an hour and then manually pressed. The oil is then allowed to rest while the water separates, pure and simple with an amazing amount of effort!
